5 Vegan Soup Recipes to Make You GLOW
Soup season is well underway and I for one have been enjoying every minute of it. Below are my 5 favourite vegan soup recipes if you’re looking for a bit of inspiration for your next pot!
Why I love vegan soup:
- It’s a really easy way to get more plants in. Eating more plants is a proven way to improve gut health so it’s important to prioritise getting in a variety of veggies, legumes, nuts and seeds.
- It’s easy to make in advance. Now I’m back in the office I love being able to set my slow cooker going in the morning, and coming home to a tasty homecooked meal.
- It can usually be made in one pot. Less cleaning – need I say more?
Flu Fighting Soup
Roasted butternut squash and red bell pepper add a delicious sweetness to the spiced coconut and lentil base resulting in an explosion of flavour with every bite!
