This oil-free mayo is delicious, healthy and takes only a few minutes to throw together! Simply add all the ingredients to a blender and blitz until smooth and creamy.
The main ingredients in this oil-free mayo recipe are silken tofu and cashews. Silken tofu adds a healthy protein source and the cashews help to make the recipe creamy and satisfying. Soak your cashews first if you don’t have a high-speed blender.

My healthy vegan mayo can be used on sandwiches, as a salad dressing, or a dip. One of my favourite ways to use this mayo is by making egg-mayo sandwiches (or egg-salad if you’re in the US!) I have a recipe for a whole-foods plant based egg-mayo here.
The mayo can be used straight away but is best when allowed to thicken up in the fridge for a couple of hours.

Equipment
- High speed blender
Ingredients
- 100 g (3/4 cup) cashews
- 300 g silken tofu
- 1 tbsp rice vinegar
- 1 tsp salt
- 1 tsp dijon mustard
- 3 tbsp water
Instructions
- Add all the ingredients to a high powered blender and mix until smooth.
- Leave to cool and thicken in the fridge for at least 2 hours
