Healthy Apple Crumble | Healthy Dessert Recipes

This is my healthy apple crumble recipe – at less than 300 calories per serving, and no refined sugar or carbs, this is the perfect dessert for when you’re craving something lighter, or just trying to stick to a healthier lifestyle. It also counts towards 2 of your 5 a day, and thanks to the blackberries, contains tons of antioxidants. All of that is great for your body, but this recipe is also absolutely delicious. You would never know it’s actually good for you!

Ingredients

The crumble topping is made from oats and walnuts which adds a delicious nutty flavour while also helping to incorporate some healthy fats. The topping is mixed with coconut oil and some maple syrup to help it to stick together and turn golden brown in the oven.

The fruity filling is made with apples and blackberries which complement each other well. The filling is also flavoured with some maple syrup, ground cinnamon and ginger powder to add some depth of flavour. A little cornstarch is used to thicken up the filling.

Substitutions

The oats can be substituted for gluten free oats, and you can use whatever nuts you prefer. I used walnuts because they’re quite soft but you could use almonds or hazelnuts for more of a crunch.

How to Make the Healthy Apple Crumble

To start, pre-heat the oven to 180 degrees C / 350 degrees F.

While the oven is warming up, prep the filling. Peel and chop the apples into 1 inch cubes.

Add them to a pan with the blackberries, water and spices and cook on a low heat for around 10-15 minutes, or until the apple just starts to turn tender.

Add the corn starch and mix well. Cook for another couple of minutes until nice and saucy.

While the apple and blackberry filling is cooking, you can make the crumble topping. Add the walnuts to a food processor and pulse until roughly ground. You could also chop by hand if you prefer.

Add the ground walnuts to a mixing bowl with the oats.

Melt the coconut oil in the microwave and mix with the maple syrup, before pouring over the oat and walnut mixture. Mix well until combined. Set aside while the filling finishes cooking.

When the filling is finished, transfer it to a baking dish spreading evenly. Tip the oat and walnut crumble mixture on top of the filling and create an even layer using a spoon.

Put in the oven for 25-30 minutes, or until the topping has turned golden brown.

Let cool for 10 minutes before serving. It’s great served with ice cream, but for a healthier option, I love to serve it with some vanilla yoghurt.

This healthy apple crumble recipe is vegan, and can be made gluten free by substituting the oats for gluten free oats.
